PORTLAND, Maine — Chef Daron Goldstein from Provender Kitchen + Bar in Ellsworth joined us in the 207 studio to share some of his favorite recipes.
This time, he showed us how to make a cheese sauce that can be used in a variety of ways. For his demonstration with us, he used it on top of pasta, cauliflower, and nacho chips.

- Yield: 1.5 Cups
Ingredients
- 6.8 ounces of your favorite cheese
- 7 ounces milk
- 1 teaspoon sodium citrate
- 1/2 teaspoon salt
Combine and Melt
- In a small pot over low heat, combine all ingredients listed above.
- Gently cook until cheese is melted.
Blend, Cool, and Serve
- Using an immersion blender, blend the contents of the pan until smooth and uniform.
