Harvest on the Harbor - Cara Stadler's Beef Tartare

Chef Cara Stadler shares a recipe for beef tartare ahead of the Harvest on the Harbor.

Cara Stadler is one of Maine's most acclaimed chefs. She runs Tao Yuan in Brunswick and just opened Bao Bao, a dumpling house, in Portland.

She'll also literally be on center stage during this year's Harvest on the Harbor as a chef at Wednesday night's "Harvest Dinner on the Stage" at Merrill Auditorium.

RECIPE

Beef Tartare with a Korean twist

Ingredients:

Gochujang Dressing:

  • 75g spicy gochujang
  • 60g red miso
  • 20g canola oil
  • (lightly cook all of these in a non stick pan, deglaze with 25g mirin)
  • add 75g rice vinegar and 20g spicy japanese mustard

Tartare:

  • 3oz tartare
  • 1tsp mined pickled ginger
  • 1TBS rough chopped kimchi
  • 1tsp chopped cilantro
  • 1tsp chiffonade scallions
  • 1TBS gochujang dressing
  • 3pc shrimp chips
  • additional spicy japanese mustard and salted egg yolk for garnish

Method:

Mix everything together and serve with rice crackers.
