Cara Stadler is one of Maine's most acclaimed chefs. She runs Tao Yuan in Brunswick and just opened Bao Bao, a dumpling house, in Portland.
She'll also literally be on center stage during this year's Harvest on the Harbor as a chef at Wednesday night's "Harvest Dinner on the Stage" at Merrill Auditorium.

RECIPE
Beef Tartare with a Korean twist
Ingredients:
Gochujang Dressing:
- 75g spicy gochujang
- 60g red miso
- 20g canola oil
- (lightly cook all of these in a non stick pan, deglaze with 25g mirin)
- add 75g rice vinegar and 20g spicy japanese mustard
Tartare:
- 3oz tartare
- 1tsp mined pickled ginger
- 1TBS rough chopped kimchi
- 1tsp chopped cilantro
- 1tsp chiffonade scallions
- 1TBS gochujang dressing
- 3pc shrimp chips
- additional spicy japanese mustard and salted egg yolk for garnish
Method:
Mix everything together and serve with rice crackers.
