ROCKLAND, Maine — Lynn Archer is the owner and executive chef of Archer's On The Pier and Brass Compass Cafe in Rockland. Seafood is her specialty and she shows us her take on a simple four ingredient recipe.
Lay salmon in a pan of olive oil. You want the oil good and hot, because you want to sear the salmon. Flip in the pan after about a minute; make sure it has a nice sear to it.
You don't want to overcook salmon, but when it seems like it's about ready, push the salmon pieces to the edges of the pan and add 3-4 tbls of chopped garlic into the pan.
Add 2 tbls of honey, which glazes the salmon; so move the fish around in the pan to coat the bottom.
Squeeze some fresh lemon juice over the top, and serve.
