Lynn Archer is thinking spring with freshly dug clam fritters and lemon squares.
Clam Fritters
- 2 cups chopped clams with juice
- 2 eggs beaten in
- Healvy salt and pepper
- 1 - 1.5 cups flour
Fry in a hot cast iron pan (pan should have about half a cup of good oil; Lynn prefers canola oil). 1-2 minutes per side.
Lemon Squares
- 2 sticks room temperature butter
- 2 cups flour
- 1 cup confectioner's sugar
Blend well with hands until you get a "coarse meal" tescture. Press in a foil lined pan and bake at 350 degress for 20 minutes. Let cool.
In a new bowl mix:
- 4 eggs
- 2 cups sugar
- 6 tablespoons fresh squeezed lemon juice.
Beat and add 6 tablespoons flour. Pour onto crust and bake for 25 minutes at 350 degrees.
Let cool. Dust with confectioners sugar.
