WEST GARDINER, Maine (NEWS CENTER) — "The Maine Way" cookbook is now out in a third edition. Originally published by the Department of Inland Fisheries & Wildlife in 1978, the book is a collection of fish and game recipes from the spouses and friends of department members.
Judy Marsh and Carole Dyer are the authors. They got the idea on their way to a meeting of wardens wives in an era when, "Everybody was anti-hunt, anti-game," Judy said
They decided to write the book because too much game was being wasted.
Now, there is a groundswell behind local food and local eating. Meat from wild game is becoming more popular, so the department decided to republish the book as part of this locavore movement.
Bonnie Holding will also be offering courses in wild game cooking in cooperation with various culinary departments at some of Maine's community colleges. Here are the course dates and locations:
Jan. 14, Feb. 11 and March 14 at Washington County Community College (Calais)
Jan. 17, Feb. 15 and March 14 at Southern Maine Community College (South Portland)
Jan. 24, Feb. 21 and March 28 at Kennebec Valley Community College (Fairfield)
